Alexey Vasilchuk is the co-owner of Vasilchuki Restaurant Group, one of the most prominent restaurant groups in Europe.  Founded with his brother Dmitry Vasilchuk back in 2016, Restart now operates over 100 projects around the world, with award-winning concepts.  From their flagship restaurant VASILCHUKI, to Group 354 in Moscow with RUSKI and BIRDS, which soar as some of the highest restaurants in the world, and DEPOT at Moscow’s Food Mall, by far the largest gastronomic project in Europe, Alexey is at the helm of a thriving empire empire. Other destinations include Italian restaurant Mama, proudly run by renowned Chef Giacomo Lombardi, the craft wine bar and Josper specialties Steak it Easy, a deliciously comforting burger chain called Burger Heroes, a fast-food chain named Plovberi, and many more.

As GM of Birds’ Dubai, Gildas Winter captains, trains and grows a team of enthusiasts, from Chefs, to front of house, artists and performers.  Very much like a Director in an orchestra, it is all about the perfect tempo and striking that high note.  The accomplished and passionate professional will propel the fine dining entertainment-driven venue to the highest altitudes of service and food, with grace, devotion and a strong sense of both elegance and mastered extravagance.

Chef Dmitry Lim wears his smile in the wink of his eyes.  The 37-year-old culinary maestro at the helm of Birds Dubai’s brigade has established himself as one of Russia’s most celebrated talents when it comes to pan-Asian cuisine.  With almost 20 years of experience at some of Moscow’s finest addresses, he is recognized for his ability to create fabulous restaurant concepts ranging from street food to high-street.  Now in Dubai, he plans to take Birds’ Intense Japanese Eurasian haute gastronomy to higher skies.

At Birds Dubai, Head Mixologist Petr Sorokovov distils a colourful, fragrant, and progressive cocktail menu, literally raising the bar on the fine-drinking scene, placing bird’s confidential counter center-stage at one of the city’s most exclusive locations, facing the skyline and iconic Burj Khalifa.
